Sylvie Provost, Owner of Auberge Val CAroll
Where time stops for a moment…
Need a little getaway to unwind? Maybe a beautiful rustic setting for a business meeting or a professional or personal event? Have you ever heard of Auberge Val Caroll in Harrington?
CAE Rive-Nord had the privilege of guiding and financially supporting Sylvie Provost, the Auberge’s owner, as she worked to reopen it after the pandemic. According to her, the meeting with CAE came as a beacon of hope during a rather difficult time. The fact that someone believed in her project and extended financial assistance made all the difference.
For many years, Sylvie Provost had dreamed of working in the hotel business and owning an inn. Her dream came true in February 2020 when she bought the charming Auberge Val Caroll. The inn is located on 94 beautifully landscaped acres of mostly wooded grounds, in a majestic setting overlooking the valley.
A delightful pavilion is attached to the inn and can accommodate 100 people for various types of receptions or events in any season. The splendid property also features a lovely chapel. Your taste buds will be delighted by the restaurant’s gourmet dishes, inspired by the season and market produce.
Her new life as an entrepreneur and innkeeper
Despite a rough start right as the 2020 lockdown was enacted, Sylvie loves being an innkeeper and entrepreneur. Seeing to the well-being of her customers, pampering them, is what she values most. Her reason for wanting to become an innkeeper.
In her opinion, the key to success in the world of entrepreneurship is knowing how to surround yourself with people who have the experience you don’t, and being open to different possibilities. Also, knocking on a lot of doors to find people who will believe in your project.
Her short-term goals are to have a pool and spa installed at the inn, which will add great value, and to further develop the business side. In the longer term, and in an ideal world, she’d like to be able to buy the 200-acre campground adjoining her property and increase the number of rooms.
For the time being, the inn and restaurant are open from Thursday lunchtime to Sunday afternoon. However, if you’d like to organize a meeting or business event here, there’s always the option to book outside daytime hours to accommodate a group.
